- Cut the pears a little on the thicker side so that they don't completely fall apart when the flatbread breaks. Unlike making a pear and cinnamon crumble, we want the pears to hold up while it bakes.
- As you add the brie cheese, spread the brie using your fingers and stretch it a little, then add the brie directly over the pears.
- Keep the brie cheese out on the counter to come to room temperature before using.
- Pre-bake the bread for a few minutes ahead of time. This will ensure that the flatbread gets even more crispy as it cooks.

- Flatbread - I really like using naan bread because it crisps well when baked, and holds up to the toppings.
- Pears - I use Bartlett pears in all of my pear recipes, especially my pear french toast bake or as a pear compote for my cinnamon waffles with pear compote.

- Honey - to add a little tang and sweetness to the flatbread.
- Thyme - not fully necessary, but adds a little earthy flavor on top!

How to make pear and brie flatbread

Step 1: Rinse the pears and slice into ¼" thin pieces.

Step 2: Slice the wedge of brie cheese into pieces, and separate and stretch a little.

Step 3: Preheat the oven to 400º and line a baking sheet with parchment paper. Lay the flatbreads down onto the parchment and add the pears.

Step 4: Top the pears with the brie cheese and a sprinkle of the fresh thyme. Bake for 10-11 minutes.
Mistakes I've Made (to avoid!)
- In one of my first recipe tests of this, I added way too much cheese and it made the bread soggy. Use just enough to cover the surface.
- In a similar test, I added the honey too early and baked it, which was fine, but it tastes a lot better when added as a drizzle of garnish along with the tyme.
- Do NOT use overripe pears as I did. The overripe pears will become too mealy and fall apart. Slightly soft, yet firm is the way to go here.

Wrap the remainder of the flatbread in aluminum foil or place into an airtight container and store in the fridge for up to 3-4 days. To freeze this, use aluminum foil to wrap, then place in the freezer for up to two months. Thaw in the fridge overnight then bake OR add to the oven at 400º and bake for 12-15 minutes or until the cheese bubbles.
