Asparagus is one of my favorite vegetables to cook with as it holds its shape well, and delivers on flavor no matter the seasoning. I love throwing chopped asparagus in to pasta dishes like my one pot creamy asparagus and spinach pasta or in a sheet pan salmon with asparagus recipe.

Trusted Tips and Key Reminders
- Remember to let the puff pastry thaw for at least an hour on the counter before attempting to use it. It will crack and be difficult to spread and roll out if it is not properly thawed.
- Dust the counters before rolling out the pastry dough, as it will help with any stickiness.
- Tuck the tail of the pastry strand underneath the asparagus to prevent it from unwrapping.
- Snap or cut off 1-2 inches of the ends of the asparagus to discard any woody ends before using.
The Main Ingredients

- Puff Pastry Sheet: Puff pastry creates the flaky, buttery layers that crisp up around the asparagus and hold everything together.
- Asparagus Spears: Asparagus add a fresh, tender bite and are the main flavor and texture of the rolls.
- Salt: Using salt enhances the natural flavor of the asparagus and balances the richness of the pastry.
- Melted Butter: We use melted butter to add extra richness and helps the pastry brown and crisp in the oven.
- Dried Basil: Brings a light herb flavor that complements the asparagus without overpowering it.

Recipe Swaps, Subs, and Add-Ons
- Feel free to use your favorite gluten free puff pastry if you have dietary needs.
- You can also swap out the puff pastry for crescent roll dough or pizza dough but it will not bake the same and will not be flaky the way puff pastry will.
- Add a dusting of fresh parmesan cheese on top before baking for additional flavor.
How to make puff pastry asparagus roll ups

Step 1: Preheat the oven to 375º. Thaw the puff pastry dough for an hour on the counter or until softened. Dust a surface with flour and roll out the puff pastry dough. Using a pizza cutter, cut thin strips of pastry dough.

Step 2: Assemble the roll ups by taking 1-2 asparagus stalks and wrapping the puff pastry around and up in a spiral. Repeat until all the dough is used. Lay the puff pastry rolls flat on a baking sheet, seam side down.

Step 3: Melt butter and mix with the dried basil, then take a pastry brush to brush the melted butter mixture on top of each of the pastry rolls. Bake for 25-30 minutes or until golden brown.
Mistakes I've Made (to avoid!)
- Do not forget to dust the surface with flour as this will help the pastry dough from sticking. Use more than you might think!
- Do not attempt to use frozen or slightly thawed dough, it will crack and become very tough to use. If you are preparing this ahead of time, you can thaw the dough in the fridge overnight. This is a similar reminder like in my asparagus and leek puff pastry tart.
- When making the roll ups my first time, I underbaked the pastry dough because the tops got too brown. If you need to, use aluminum foil to cover them for the last few minutes.

Asparagus Wrapped in Puff Pastry FAQs
You can store the leftovers in an airtight container and store in the fridge for 5 days.
You can warm them up in an oven at 325º for 10-15 minutes until crispy. If you microwave them, they will get soft and less flaky.
If you want to spruce up these pastry roll ups, you can thin slices of proscuitto, bacon, or top with parmesan cheese. Similar to dipping my mediterranean meatballs with dill gravy into tzatziki, you can also use tzatziki for these roll ups too.
