I am such a fan of arugula that I knew I had to make a salad with it, aside from pairing a simple arugula salad with chicken milanese. I'm also a major nectarine girlie in the summertime, so that just made complete sense to me. Simple Swaps and Substitutions
- Use other types of fruit is nectarines are not your thing. Use peaches, apricots, apples, pears, or even plums.
- If you'd prefer to use another cheese, I'd recommend fresh mozzarella, halloumi works nicely here too, or creamy goat cheese.

Step 4: For the lime vinaigrette: add the agave nectar, white wine vinegar, olive oil, lime juice and zest, salt and pepper into a large mixing bowl or measuring cup, then whisk vigorously until well combined. Drizzle on top of the salad and serve.
Mistakes I've Made (to avoid!)
- Burrata is a very wet cheese as it has cream in the interior and sits in liquid in the container. Do not forget that the liquid will wilt the arugula, so assemble the burrata immediately before you plan to serve.
- Don't forget to use enough arugula so that the salad looks full and retains the volume when serving. Arugula can look underwhelming if it is not in bulk.
- Do not use mushy or very ripe nectarines. You want to find nectarines (or even peaches) that are slightly softened, but overly ripe fruit will not hold up in this salad.

If you are prepping ahead of time for an event, simply wrap the platter in plastic wrap and set in the fridge. Unwrap before serving. You could also store any leftovers by placing in a flat airtight container for up to 2 days. Store the remaining dressing separate from the salad.
As I mentioned above, shrimp or even chicken thighs work nicely in this salad, or you can change up a few of the ingredients like swap pecans for cashews, arugula for romaine or butter, and burrata cheese for goat cheese.
No way! If you want to keep it plain, drizzle some finishing olive oil, a squeeze of lemon, and serve. It's that simple!
