When it gets (too) hot out and you need a quick and refreshing snacky snack, this watermelon salad with feta is always the right move.

I am a huge watermelon fan, so this watermelon salad was just a necessity. Big chunks of juicy watermelon mixed with salty feta is a pretty common combo, but when you add balsamic drizzle, this recipe goes from common to fab in five seconds flat. Add in a handful of fresh torn mint and you've got an all-star fruit salad for your next cookout.

I will never say no to watermelon. Whether it's served by the slice, in chunks, in a yummy watermelon frose, or in a popsicle, I am always down for some watermelon. I love the juicy, fresh flavor, the crunch of the actual melon itself, and always knew I wanted to make a salad out of it.

  • Prep Time: This takes minutes, literally minutes, to prep and serve. Guaranteed this will be the easiest salad you make.
  • Prep Level: You do not need any sort of expertise or culinary experience to make this recipe. This is honestly as easy as it gets. Chop (or buy!) a watermelon into chunks, sprinkle the feta and mint, top with balsamic glaze. Done and dusted.
  • Best Served With: This is a BBQ MUST have, so be sure to whip up this watermelon salad with feta and mint alongside a stack of grilled teriyaki chicken thighs, greek chicken burgers with tzatziki sauce, a savory caesar pasta salad, and for dessert, serve up mango yogurt popsicles or no bake cheesecake bars.

  1. Char or Grill the Watermelon First: If you want to amplify the flavor, chargrill or regularly grill the watermelon before adding the feta and mint. It'll give the watermelon a smokey type of flavor when it pairs with the feta.
  2. Microplane (or finely slice) the Mint: Sometimes mint can become overpowering if unevenly ripped or chopped, so you can either use a microplane to make the mint very fine, or mince/finely slice the mint into thin strips.
  3. Use Glaze, not Vinegar: When adding the balsamic, you want to use the thicker, sweeter balsamic glaze instead of the vinegar. It adds an even sweeter, sharper flavor to the watermelon, and when paired with the feta, it's a balance in flavor.

  1. Watermelon - Using fresh sliced watermelon is perfect for this watermelon salad. I do not recommend using frozen or pre-cut as it doesn't always hold up the same as if you were to slice it yourself.
  2. Feta - Feta is salty, creamy, and has a sharp flavor, which is balanced by the other ingredients and creates contrast to the watermelon.
  3. Mint - Aside from just adding color and contrast to the watermelon and feta, it gives an herby flavor to the dish.
  4. Balsamic Glaze - A simple drizzle goes a long way for this salad, as it adds a little acidity and sweetness to the overall dish.

Step 1: Slice up the watermelon into small chunks of fruit, then lay on a flat plate. Top with crumbled feta cheese.

Simple Swaps and Substitutions

  • Swap the feta cheese for provolone, mozzarella cheese (fresh or part skim), or fresh shaved parmesan cheese.
  • Instead of mint, you can easily use basil or thyme.
  • You don't need to use the balsamic glaze if you would prefer something else, you can do agave nectar, honey, or even a drizzle of pesto.

How do I store the watermelon?

You can easily add the watermelon leftovers to an airtight container and place in the fridge. This salad will last for up to 2 days, and it is best when consumed fresh.

Do I need to use mint or can I use something else?

If you prefer to use something other than mint, you can use basil, thai basil or thyme. These herbs add freshness and herby flavor.

Are there other cheese than feta?

Swap out the feta cheese for mozzarella, provolone, or parmesan cheese.
