- Do Not Over-Mix the Meat: Rake the ground chicken together with the spices and feta using your four fingers, minus the thumb. This method helps to keep the meat nice and tender, and lessens the risk of over mixing which will cause the burgers to become chewy.
- Add Rest Time: Allow for the ground chicken to sit on the counter for 10 minutes before working it into burgers.
- Use a Meat Thermometer - I cannot recommend this enough, once I started using a meat thermometer, my grilled meats, especially burgers, consistently taste exactly as they should and come out cooked to a perfect temperature.

- Ground Chicken - I prefer to use ground chicken that is a combination of light meat and dark meat. If you can't find that, don't worry about it, just use whatever you have on hand or can find.

- Dried Spices - I like using dried spices in my burgers such as dried oregano, paprika, and dried basil. I also use some garlic powder to amplify the flavor of the burger.

Step 1: In a large mixing bowl, combine the ground chicken, feta cheese, dried spices, and rake together to form a meat mixture.

Step 2: Take 1-2 scoops of the ground chicken mixture and roll into a ball, then flatten into circles/patties with your hands. Lay flat on a plate and repeat until all the ground chicken is used.

Step 3: Add the chicken burger to a large skillet, cast iron pan, or directly onto a grill and cook for a few minutes (4-5 minutes). Flip.

Step 4: Continue to grill or cook the chicken burgers until the internal temperature reads 160º. Serve as desired.
Simple Swaps and Subsitutions
- If you are not into ground chicken, you can swap for ground turkey or even ground beef.
- You do not need to put the burger in between a bun, you can serve on top of a bed of lettuce with other veggies, over a greek salad, or in a bowl as a hamburger bowl. For bun swaps, you can use a pretzel bun, brioche bun, or a potato roll.
- Instead of adding the feta into the burger, you can whip the feta and add on top, or simple add crumbles of feta with red onion and lettuce.

Add any leftover chicken burgers to an airtight container and store in the fridge for up to 3 days.
Yes! These burgers are great stored in the freezer. Simply wrap them in plastic wrap, then add them to a plastic food storage bag (I like to be extra safe when storing burgers to prevent freezer burn). Keep in the freezer for up to 2-3 months. Thaw overnight in the fridge.
You can use anything you want on these burgers, so if you don't want tzatziki, top the burgers with sliced red onion, tomato, lettuce, mayo, ketchup, or a slice of Swiss cheese.
