What are the ingredients for this recipe?
French toast really doesn't call for many ingredients other than the standard, but with this recipe based off of ingredients for tiramisu, we add in a few different things, so let's see what we need:
- Brioche Bread - You could also use challah bread here, but I love the flavor of brioche with this particular recipe. Personally, either challah or brioche bread is the best!
- Eggs
- Milk - I tend to use half and half, which gives it a creamier texture.
- Espresso Powder - Delallo makes incredible espresso powder!
- Cold Brew Coffee - I love La Colombe cold brew, among others, but you can also just use regular drip cold coffee
- Vanilla Extract
- Whipped Cream - to go in between each slice of brioche.
- Butter - frying the brioche after it's dipped in the egg and milk mixture.
See the recipe card below for more information about quantities.
How do I make this french toast?
The best thing about making this recipe is that it's made the exact same way you would make other versions of french toast, just made with some coffee, espresso powder, and fresh whipped cream in between.
Crack the eggs into a large mixing bowl, then pour in the milk and cold brew coffee. Whisk to combine.
Add the dusting of espresso powder to egg and milk mixture, then whisk again to incorporate.
Add each piece of brioche bread to the egg mixture, dipping on each side to fully coat the slice of bread.
Melt the butter in a frying pan over medium heat, then add in the pieces of egg-dipped bread. Flip after 2 minutes, repeat until the bread has been cooked.
Let the french toast cool or 2-3 minutes. Place one piece of french toast on a plate, then add a little whipped cream on top, place a second piece of french toast, then more whipped cream, etc. Repeat until you have a stack of a few slices of french toast, then a final layer of whipped cream followed by a dusting of french toast. Top with syrup and serve.
Hint: The brioche needs to sit in the milk and egg mixture for some time in order for the bread to fully absorb the liquid. Otherwise, when the bread cooks in the pan, it won't get as soft and "soggy" as you'd expected with french toast.
Recipe Swaps and Substitutions
Gluten free? Dairy free? I've got you covered with the best swaps and substitutions for this recipe to make it your own, but still taste really, really, ridiculously good.
- Bread - instead of regular brioche bread, you can swap for a gluten free version.
- Milk - use almond milk or oat milk instead of regular or half and half.
Recipe Variations
Making this for a crowd? For kids? Here's some variations you can amke to this recipe to satisfy all types of eaters and events:
- French Toast Sticks - this recipe will be the exact same, except cutting the brioche into sticks, or even french toast bites, instead of large slices of bread.
- Kid Friendly - take out the coffee and espresso powder, and add in cocoa powder!
- Casserole - make this for an entire brunch by dicing an entire loaf of brioche bread, tossing the cubes into a casserole dish, and increasing the eggs and milk (6 eggs in total, 1 ½ cups milk in total), and pouring into the casserole covering all of the pieces of bread. You can dust the espresso powder on top at the end of it baking. This casserole also be prepared ahead of time, to make the day of the event or brunch.
Kitchen Tools and Equipment
Making french toast requires very minimal equipment in the kitchen. All of the items you will need include:
- One large mixing bowl
- One whisk
- One frying pan
- One spatula
- A sieve - to dust the espresso powder
- Optional for a casserole dish if you're opting to make this in a larger form.
- Measuring cups and spoons (really only to measure espresso powder and the cold brew)
How do I store this recipe?
If you want to make the french toast ahead of time, simply add the cooked french toast pieces into a tupperware and place in the fridge. This will last for up to 3 days. If it's already assembled, it will be good for up to one day. Reheating with the whipped cream on top will cause the cream to melt, so I would advise against this.
PRO TIP:
Make your own whipped cream by adding 1 cup of heavy whipping cream to a chilled bowl, with one tablespoon of sugar. using a hand mixer with the whisk attachment, or a stand mixer, whisk on medium speed until the cream begins to thicken. Continue to whisk until the cream forms a whipped cream and creates a stiff peak. This is delicious to use for all sorts of recipes, especially layered in this french toast recipe.
