Steak Tips Cooking Reminders
- Make sure the steak marinades for even just a short amount of time to allow the meat to absorb the oil and the seasonings.
- Bring the steak tips to room temperature before cooking. The reason for this is to not shock the muscle as it hits the hot pan. This causes the meat to get slightly chewy and gummy, but with room temperature meat, it cooks evenly and turns out juicy.
- Slice the garlic on the thinner side so that there's enough garlic in the surface area of the cast iron. Thinly slicing brings out a subtle shift in aromas and flavor of the garlic versus mincing or chopping.
The Main Ingredients
- Steak Tips: The main protein, providing tender, flavorful bites of beef.
- Olive Oil: Helps coat the potatoes for even cooking and browning.
- Salt: Enhances the flavor of the steak and potatoes.
- Black Pepper: Adds a mild heat and seasoning to the steak.
- Onion Powder: Adds a savory, slightly sweet flavor to the steak seasoning.
- Paprika: Adds color and a mild smoky flavor to the steak tips.
- Worcestershire Sauce: Adds a tangy, savory flavor that enhances the taste of the beef.
- Thyme: Provides an earthy, herbal flavor that complements the steak and garlic butter.
- Salted Butter: Creates a rich, buttery sauce for coating the steak tips and potatoes.
- Garlic: Adds a bold, savory flavor to the butter sauce.
- Potatoes: Provide a hearty side with crispy edges and a tender center.

Steak Tips Recipe Swaps and Substitutions
- I would not swap out the steak tips as this recipe is designed around the steak tips. If you cannot find steak tips, you can buy a sirloin flap (also know as bavette) and cut into smaller pieces.
- If you want to make this dairy free, use your favorite dairy-free butter that MELTS. Miyokos is the one brand I always recommend for a dairy-free butter swap.
- Instead of the cast iron, you can use a stainless steel pan, but remember to let the stainless steel pan to get very hot before adding the steak. The best way to know that the steak is ready to be flipped on a stainless steel frying pan is lifting the edge of the steak, and if it comes off from the pan easily, it's ready. Do NOT force it.
How to make garlic butter steak bites

Step 1: Marinade the steak tips in the olive oil, paprika, salt, garlic powder, Worcestershire sauce, and black pepper.

Step 2: Toss the potatoes into the olive oil and season with salt. Add to the air fryer in an even layer, then air fry for 15 minutes.

Step 3: Heat a cast iron pan on high heat. Once the pan is hot, add the steak tips to the pan, cooking on all sides for 2-3 minutes.

Step 4: Push to the side of the cast iron skillet. Melt the butter on the side of the skillet that is empty on a low heat. Once the butter is melted, add in the garlic and mix to combine, let the garlic get fragrant 1-2 minutes.

Step 5: Once the potatoes are done cooking, add to the cast iron skillet and baste together with the steak and the garlic butter. Serve with fresh thyme.
Mistakes I've Made (so YOU don't have to!)
- Do not add more butter that recommended, otherwise it will become soupy. In my first test, I added way too much butter and while it was delicious, it wasn't the consistency I was aiming for. Trust the process, and only use the amoung suggested. You don't want to overpower the steak.
- Do not assume that the steak will remain your desired temperature/doneness while sitting in the garlic butter sauce. If the flame is on, the steak will continue to cook, and the steak can end up dry and overcooked. Watch the flame under the cast iron (I'd recommend lowering the flame to a simmer when adding the butter) and make sure you don't overcook the steak as you sear it.
- One of the biggest mistakes that can happen is using too high of a heat and burning the steak, especially when adding cold steak to the pan or not letting the cast iron become hot beforehand. Give the pan time to heat up, and bring the steak to room temperature, or at least chill on the counter for 15 minutes before marinading.

Steak Tips Recipe FAQs
Make sure the cast iron is very hot before adding the steak, and ensure that you are not using a high heat the entire time. A medium flame is perfect, especially because the steak will continue to cook when you make the garlic butter sauce.
You can find a sirloin flap and ask for it to be cut into 1" pieces, or bring it home and cut the sirloin yourself with kitchen shears.
Add the leftovers to an airtight container and store in the fridge for up to 3 days. To reheat, you can add to a baking sheet and cover with aluminum foil, reheat at 325º for 10-15 minutes or until fully warmed through.
This recipe has a built in side due to the air fried potatoes, but you can omit those and make my red bliss garlic herb mashed potatoes instead. I also like making garlic broccoli rabe or creamed corn.
