Marinade the steak tips in the olive oil, salt, black pepper, garlic powder, Worcestershire sauce, and paprika.
While the steak marinades, toss the potatoes into the olive oil and season with salt. Add to the air fryer in an even layer, then air fry for 15 minutes.
Heat a cast iron pan on high heat. Once the pan is hot, add the steak tips to the pan, cooking on all sides for 2-3 minutes.
Push to the side of the cast iron skillet. Melt the butter on the side of the skillet that is empty on a low heat.
Once the butter is melted, add in the garlic and mix to combine, let the garlic get fragrant 1-2 minutes.
Once the potatoes are done cooking, add to the cast iron skillet and baste together with the steak and the garlic butter. Serve with fresh thyme.
Notes
Make sure the steak marinades for even just a short amount of time to allow the meat to absorb the oil and the seasonings.Bring the steak tips to room temperature before cooking. The reason for this is to not shock the muscle as it hits the hot pan. This causes the meat to get slightly chewy and gummy, but with room temperature meat, it cooks evenly and turns out juicy.Slice the garlic on the thinner side so that there's enough garlic in the surface area of the cast iron. Thinly slicing brings out a subtle shift in aromas and flavor of the garlic versus mincing or chopping.
