The best way to ring in the start of a new year, or really, any weekend, is with this perfect, easy, mouthwatering brunch charcuterie board. No matter who you are entertaining, they'll love the spread and you'll be hired for breakfast gatherings from now on.
This is not your ordinary breakfast, this is a brunch charcuterie board, curated for just about any gathering you can think of, for any time of year, especially Mother's Day or birthdays.
I love brunch and breakfast foods, so this breakfast board was inspired by all of my delicious breakfast recipes like my paleo pancakes, my lemon poppy seed pancakes, and waffles such as my pumpkin honey waffles.

What are the ingredients for this recipe?
Making a serving board can vary the ingredients depending upon the people that are attending your breakfast or brunch gathering. For this particular version, here's what I used:
- Pancakes - I love Kodiak Cakes, and you can find them at almost any grocery store. If you want to make homemade, I have some delicious ones on my site.
- Eggs - you can opt to add hard boiled or scrambled, like I did.
- Croissants - I love miniature versions for this board, but you can swap for the ones you find at your local store.
- Bagels - I used mini bagels as they fit perfectly, but you could always use large ones and slice in half.
- Cream Cheese
- Fruit: Fruit like orange slices, apples, pears, grapes, or even strawberries work beautifully on a board such as this.

How do I make this recipe?
Assembly of any board is really about finding your flow with where each item fits on the board. I typically start by placing a larger bowl or piece of food on the board and seeing how, like Tetris, everything else fits together.
On a large, circular platter, arrange the ingredients to make a decorate board. First add the condiments, then layer in the bagels, croissants, pancakes, fruit, and eggs. Top with extra fruit as garnish.
Serve with champagne, orange juice, or any other drinks and beverages perfect for brunch.
HINT: Remember to balance out the sweet with the savory, and add in the fruit that you like as a garnish!
Board Swaps and Substitutions:
Creating boards such as this one lends itself to a variety of different foods, see below for some options:
- Bagels - you can easily swap out regular bagels for gluten free versions, either large or mini size.
- Eggs - you can omit eggs entirely if you want too, or replace with hard boiled eggs.
- Pancakes - opt for waffles if that's what you like better.
- Tater tots - you can easily omit the tater tots and sub in fries, home fries, or completely leave them off.
Charcuterie boards are the perfect way to experiment with a bunch of different food items, so the creativity level is unlimited!
Board Variations
While this board naturally gives a variety of what to serve and how to serve it, let's look at the variety of times that you would serve this type of board:
- Breakfast - the most obvious idea, but you can serve this for your family on one Sunday morning if you're looking to make Sunday breakfast (or Saturday) a little more festive.
- Holidays - wow the entire crowd at your next holiday gather with this board, double the size if you're having more than 4-6 people.
- Kid friendly - make it kid friendly by subbing in in rice krispy treats, mini french toast sticks, and mini waffles!
Kitchen Equipment and Tools
The only kitchen "tool" you will need is a circular serving platter, such as a marble board, a wooden serving board, or even a plate! You don't need to go out and buy something if you have it already in the house. I say circular because I find that circular boards present well, unless they are very very long like a rectangle board.
Other tools that you might need depending upon if you cook the board items or not include:
- Toaster oven
- Mixing bowls
- Frying pans
- Waffle irons
- Spatulas
- Measuring spoons and cups
How do I store these items? Can I freeze any?
Storing any of these items is a breeze. Add the mini bagels and croissants to a ziplock bag and store in the fridge. Place eggs and pancakes in tupperware to be consumed at least up to 2 days. You freeze all of these items, but consume within a month, except the eggs, I would not freeze the eggs, but that's my personal opinion.
PRO TIP:
Prepare everything the day before serving it, then assemble the morning of. That way you're not spending hours in the kitchen on the same day.
