Celebrate every single occasion in your life with these amazingly fluffy waffles, champagne waffles that is. A little prosecco is all it takes to make these waffles sparkly, bubbly, and taste incredible.
Champagne is suitable all year round, and is my favorite go-to drink on most occasions! Waffles are a staple breakfast item, so I thought, why not combine the two for an even more festive breakfast celebration?!
I've used prosecco or champagne in cocktails like my citrus spritz cocktail, but I've never made champagne waffles, until now. When I say these are absolutely perfect, I mean it.

What are the ingredients for these waffles?
- All Purpose Flour: the best type of flour to use for waffles, pancakes, you name it!
- Sugar: We don't need much here, just a little will go a long way
- Eggs: Our binding agent
- Milk: helps with the moisture in the recipe.
- Baking Powder: This will help give the waffles the fluff factor.
- Vanilla extract - a little extra flavor.
- Oil: Olive or avocado works best. The oil gives the waffles the crisp exterior.
- Prosecco or Champagne: You don't need a lot here, so try and grab a smaller bottle versus a larger one.

How do I make these champagne waffles?
Step 1: Crack the eggs into a large mixing bowl and pour in the olive oil, vanilla, prosecco or champagne, sugar, and milk. Whisk to combine. To the same bowl, pour in the flour, baking powder, then whisk to incorporate.
Step 2: Ladle waffle batter into a pre-greased and hot waffle iron, and let cook until desired crispness. Repeat until all waffles are made. Create a stack of waffles and top with whipped cream and optional gold sprinkles.
HINT: Let the batter sit on the counter for a few minutes to allow the baking powder to work its way through and give the waffles a deliciously airy texture.
Recipe Swaps and Substitutions
Gluten Free? Dairy Free? Here are a few standard swaps you can make for this recipe:
- Gluten free flour: this won’t really change the bake time, but it will alter the taste and texture. I swear by Bob’s Red Mill Gluten-Free All Purpose Flour, which you can find on Thrive Market or in a variety of other stores.
- Milk: if you want to make this dairy free, swap out the regular milk for almond or oat milk!
- Sugar: I like using Wholesome Sweet’s brand of organic cane sugar, but I also really like their coconut sugar (Bob’s Red Mill makes a great coconut sugar too). Coconut sugar is usually a 1:1 replacement, but sometimes, real organic sugar is best, and in these waffles the real deal is where it’s at.

Looking to make this recipe your own? Here's a few variations to the recipe you can make, including ways to serve them:
- Mini - you can make these into miniature waffles if you have a mini waffle iron. Fun, cute for kiddos to snack on too.
- Pancakes - turn this recipe into pancakes. Waffle and pancake batter are essentially the same, but pancakes will require a touch more oil (I would add 2 additional tablespoon of oil to the batter if you want to make these pancakes)
- Add-ins - feel free to add in fresh fruit, chocolate, or sprinkles within the batter themselves!
How do I store this recipe? Can I freeze it?
You can most definitely freeze this recipe, and storage is a breeze. Simply add any remaining waffles to a large container or ziplock bag, store in the fridge for up to 4 days, or in the freeze for one month. Let defrost in the fridge the night before you want to eat them.
PRO TIP:
For a fun way to eat these waffles, sandwich some ice cream between two waffles and enjoy a waffle ice cream sandwich!

- ¾ cup whole milk
- 2 large eggs room temperature

- 3 tablespoon prosecco
