Creamy peanut butter baked oats slathered with concord grape jelly, because what else?

There's literally nothing quite like the flavors of peanut butter and concord jelly. With variations of this like my almond butter pancakes with berry compote, it's one of those flavor combinations that never goes out of style.

- Remember to grease the baking pan and line with parchment to alleviate and sticking and easy removal.
- Peanut butter, especially a natural peanut butter that needs to be stirred, adds additional moisture, so be careful when adding the PB and stick to the bake time.
- Fold the ingredients gently to alleviate any gumminess and the oats falling apart.
- For clean lines when cutting the baked oats, wait a solid 15-20 minutes for the oatmeal to cool.
Make it Meal Prep Friendly
Oatmeal bakes are MADE for meal prep because they are easily portioned, reheated well, and can be zhuzhed up with different add ins like protein powder for a more full-feeling.
Divide the oatmeal bake into separate containers for the week, and portion out the grape jelly to top it. This way it's all set to grab and go or heat up before your Zoom calls kick off for the day.

Baked Oatmeal Swaps and Substitutions
- Swap out the milk for your favorite dairy alternative
- If you are not a fan of concord grape, use your favorite jelly flavor. Other flavors I love with this are fig, strawberry, or a mixed berry.
- You can easily substitute almond butter for peanut butter as I've done this many times before and it's a very simple swap.
How to make peanut butter and jelly baked oatmeal

Step 1: Preheat the oven to 375º. Mix together the rolled oats, cinnamon, baking powder and salt.

Step 2: In a separate bowl, combine the whole milk, peanut butter, oil and eggs.

Step 3: Pour the wet ingredients into the rolled oats and mix together with a spatula until fully combined.

Step 4: Pour into a 9x9 baking pan and bake for 35 minutes. Top with a few dollops of jelly, let cool for 10 before serving.
Mistakes I've Made (so YOU don't have to!)
- Do not add more liquid than you have to, because that will make the baking uneven and cause the middle of the oatmeal bake to take longer to bake.
- Do not forget to spray the pan and line with parchment paper. This makes removing the baked oatmeal easier and less issues with it falling apart.
- Do NOT mix vigorously when adding the oats into the wet ingredients. Use a spatula instead of a whisk, the whisk is too aggressive for the oats.

Peanut Butter Oatmeal Bake FAQs
I like adding the grape jelly when the oatmeal is slightly warm, so that it sort of melts into the top of the oatmeal. You can certainly swirl some of the jelly into the oatmeal before it bakes, too.
You can add the baked oats to an airtight container and place in the fridge for up to 3-4 days.
Yes! GF oats work really well as a simple swap for regular rolled oats.

- 1 tablespoon cinnamon
- 2 teaspoon baking powder
- ½ teaspoon salt
- 1 ½ cup whole milk
- ¼ cup peanut butter
- 3 tablespoon avocado oil
- 2 large eggs
- 2 tablespoon concord jelly
Instructions
