Using a slow cooker is typically relied on during the winter months, but I find great use in it when I have a busy week coming up and I need a recipe to last more than once. This recipe is 100% perfect for that!
I love slow cooker recipes like my braised short ribs or even a ground turkey skillet like my ground turkey stuffed sweet potatoes. Keeping things on a low and slow flame makes the flavors even more delicious.

Using a slow cooker couldn’t be any easier than prepping, setting, and hours later, you’ve got a delicious meal to share. What are the ingredients for this recipe?
This recipe is a riff off of the classic Mississippi Pot Roast which uses similar ingredients, except mine is taken up a notch by making them into delicious sliders paired with the au jus you get from the slow cooked pot roast. It’s the most delectable, savory, drool-worthy recipe, and is the perfect dish for a slow cooker. You’ll need just a few pantry items, and then a few other ingredients:

- Pot Roast: the star of the dish! I would say to look for a cut that has a decent amount of marbling and fat. The fat will add loads of flavor.
- Pepperoncinis: this is what is going to give our dish that spicy, briny flavor! It adds a beautiful acidity as well as a tangy flavor. This is going to cook down with the meat.
- Beef or Vegetable Stock: We need liquid to render down the roast, so I like using beef stock to add more flavor.
- Water: To balance out the beef, we use some water for the liquid as well.
- Worcestershire Sauce: Using Worcestershire sauce gives a bit more savory flavor to the dish.
- One Packet Au Jus Seasoning: This is where we get the flavors for this dish alongside the pepperoncinis. One packet is all it takes here!
- Salt: A dash goes a long way! Salt is always a good idea in slow cooker recipes.
- Pepper: To balance the salt.
- Bay leaves: Bay leaves round out the flavor profiles of this dish.

How do I make this recipe?
The best part about making a slow cooker recipe is that everything goes into the pot relatively at the same time. You dial in the temperature setting, set a timer, and let the slow cooker do its thing. For this recipe:

Start by popping the sides of the slow cooker and remove the lid. This is an extra large slow cooker so you have loads of space in here! From there, add in the pot roast, and pour in the pepperoncinis, the au jus seasoning, stock, and Worcestershire sauce. Stir a little and poke the pot roast with a fork to tenderize just a bit.
Add in the salt, pepper, and bay leaves. Close the top of the slow cooker, no need to close the clips as this is just for the transport of the slow cooker. Turn the temperature knob to high and set a timer for 4 hours.

Once the timer is done, the pot roast should be fork tender. Remove the pot roast and shred using two forks. Add the meat back to the pot and turn the dial on the slow cooker to warm.
To assemble the sliders: Slice open a few small potato dinner rolls. Using tongs, grab some of the pepperoncini pot roast from the slow cooker and spread evenly across the rolls. Layer a few slices of provolone on top and close with the tops of the rolls. Ladle a cup of au jus and serve alongside the pot roast sliders. Dip as desired!
Hint: Be generous when seasoning the pot roast with salt and pepper. We want to ensure there is enough seasoning while the meat cooks.
Tips and Tricks for Cooking with a Slow Cooker:
Using a slow cooker can take some practice, but you’ll come to fall in love with using one just as much as I do. Here’s a few tips and tricks for using a slow cooker on a regular basis:
- Plan your meals ahead of time - I love making a large batch of chili or bolognese to have for the week, so if you’re planning to do that, you’ll have plenty of leftovers for other meals.
- Get creative - Chili, pot roasts, and soups are not the only meals you can make with a slow cooker. A slow cooker is great for making dips, pudding, desserts, and meatballs. I know I’ll be testing some slow cooker greek meatballs sometime soon.
- Don’t have time for a slow cooked meal? You can take a recipe that calls for a cook time of eight hours and turn it into a quicker meal by swapping the cook temp from low to high. Plus, the warm function is a lifesaver when kids are running late from practice, or a work meeting goes a little too long.
Recipe Variations
This pot roast recipe lends itself to literally endless combinations of sides, so here's some of my favorite ways to serve this if I don't use bread or dinner rolls:
- Rice - make some bone broth rice (white rice - I prefer jasmine - cooked in bone broth!) and top with pulled pot roast and the au jus from the meat. It's incredibly delicious
- Pasta - make some egg noodles or fettuccine and top with the pot roast, sauce, and pepperoncinis. Add some freshly shaved parmesan if you're up for it!
- Potatoes - you can either make smashed, baked, or mashed potatoes for this dish. Either way, you will love it.
Kitchen Equipment and Tools
The biggest benefit of using a slow cooker is that it typically doesn't call on many other items from your kitchen. All you really need is the slow cooker, and in this case, Hamilton Beach's 10 Quart Slow Cooker is perfect!
If I want to get extra flavor, I sear the pot roast (or any meat) prior to adding to the slow cooker, but that's entirely up to you!
How do I store the leftovers?
Add any leftover pot roast to a tightly-sealed tupperware and store in the fridge for up to five days. You can use this for meal prep for the week for lunch or for dinners.
PRO TIP:
Add one tablespoon flour to the au jus in the slow cooker, stir to thicken the sauce, and it becomes a gravy to use for other dishes or sides like mashed potatoes.
