Stop overthinking dinner! Let the magic of a slow cooker do the work for you with these slow cooker pepperoncini pot roast sliders. One kitchen tool is all it takes to make these sliders, leaving you plenty of time for more important time for family.
Using a slow cooker is typically relied on during the winter months, but I find great use in it when I have a busy week coming up and I need a recipe to last more than once. This recipe is 100% perfect for that!
I love slow cooker recipes like my slow cooked braised short ribs or even meatballs in a sweet and sour sauce. Keeping things on a low and slow flame makes the flavors even more delicious.

Benefits of Investing in a Slow Cooker
Using a slow cooker couldn’t be any easier than prepping, setting, and hours later, you’ve got a delicious meal to share. Hamilton Beach’s 10 quart slow cooker is the only 10 quart slow cooker on the market, and that is a big deal, especially when I’m hosting upcoming holidays. I’m a believer in easy, approachable, no-nonsense recipes, and having this slow cooker in my arsenal of reliable and handy kitchenware is very important. Here’s a few more reasons why having a slow cooker is the best investment:
- This particular slow cooker makes it even easier with an easy to use knob, so setting the right temperature is a breeze.
- You can cook a meal in 4 hours or in 8 hours, depending upon the recipe and how long you have to make it.
- Prep everything in advance, toss it into the slow cooker, set a timer, and come back home to the smell of yummy food ready for you to enjoy.
- The slow cooker is all it takes to create a slew of different meals, so there’s no need to mess up an entire kitchen! Who doesn’t love that?!
Hamilton Beach’s 10 quart slow cooker goes the extra mile with making this particular slow cooker a stay or go, meaning you can easily take this with you to a pot luck. The lid locks on both slides, making this slow cooker easy to transport to a pot luck or to a different location. Easy peasy!
Where does this pot roast slider recipe come from?
This recipe is a riff off of the classic Mississippi Pot Roast which uses similar ingredients, except mine is taken up a notch by making them into delicious sliders paired with the au jus you get from the slow cooked pot roast. It’s the most delectable, savory, drool-worthy recipe, and is the perfect dish for a slow cooker.
What are the ingredients for this recipe?
- Pot Roast: Look for a cut that has a decent amount of marbling and fat. The fat will add loads of flavor.
- Pepperoncinis: this is what is going to give our dish that spicy, briny flavor! It adds a beautiful acidity as well as a tangy flavor. This is going to cook down with the meat.
- Beef Stock: We need liquid to render down the roast, so I like using beef stock to add more flavor.
- Water: To balance out the beef, we use some water for the liquid as well.
- Worcestershire Sauce: Using Worcestershire sauce gives a bit more savory flavor to the dish.
- One Packet Au Jus Seasoning: This is where we get the flavors for this dish alongside the pepperoncinis. One packet is all it takes here!
- Cheese: the cheese helps to offset the spice and tang of the pepperoncinis. I recommend either provolone or swiss cheese.
See the recipe card for specific information about quantities.
How do I make this pot roast slider recipe?
Step 1: Pop the sides of the slow cooker and remove the lid. Place the pot roast in the center of the slow cooker and add salt, pepper, and a packet of au jus seasoning.
Step 2: To the pot roast, add in the jar of pepperoncinis and the juice from the peppers.
Step 3: Pour in the beef stock, water, and Worcestershire sauce. Close the lid and set on low for 6 hours (or on high for 4 hours).
Step 4: When the timer is up, remove the lid and take out the pot roast.
Step 5: With two forks, shred the pot roast and add to the bottoms of sweet rolls.
Step 6: Top the sweet rolls with slices of cheese (provolone or swiss work great) and close with the tops of the rolls. Serve with a small bowl of au jus for dipping.
Hint: Be generous when seasoning the pot roast with salt and pepper. We want to ensure there is enough seasoning while the meat cooks.
Tips and Tricks for Cooking with a Slow Cooker:
Using a slow cooker can take some practice, but you’ll come to fall in love with using one just as much as I do. Here’s a few tips and tricks for using a slow cooker on a regular basis:
- Plan your meals ahead of time - I love making a large batch of chili or bolognese to have for the week, so if you’re planning to do that, you’ll have plenty of leftovers for other meals.
- Get creative - Chili, pot roasts, and soups are not the only meals you can make with a slow cooker. A slow cooker is great for making dips, pudding, desserts, and meatballs. I know I’ll be testing some slow cooker greek meatballs sometime soon.
- Don’t have time for a slow cooked meal? You can take a recipe that calls for a cook time of eight hours and turn it into a quicker meal by swapping the cook temp from low to high. Plus, the warm function is a lifesaver when kids are running late from practice, or a work meeting goes a little too long.
Ways to vary this recipe
This pot roast recipe lends itself to literally endless combinations of sides, so here's some of my favorite ways to serve this if I don't use bread or dinner rolls:
- Rice - make some bone broth rice (white rice - I prefer jasmine - cooked in bone broth!) and top with pulled pot roast and the au jus from the meat. It's incredibly delicious
- Pasta - make some egg noodles or fettuccine and top with the pot roast, sauce, and pepperoncinis. Add some freshly shaved parmesan if you're up for it!
- Potatoes - you can either make smashed, baked, or mashed potatoes for this dish. Either way, you will love it.
Storage and Freezer Information
To Store: Add any leftover pot roast to a tightly-sealed tupperware and store in the fridge for up to five days. You can use this for meal prep for the week for lunch or for dinners.
To Freeze: Add any meat and au jus to an airtight container and place in the freezer. Thaw overnight and add to a pot with ¼ cup water, turn the heat to a medium low and let warm.
PRO TIP:
Add one tablespoon flour to the au jus in the slow cooker, stir to thicken the sauce, and it becomes a gravy to use for other dishes or sides like mashed potatoes.
