- Invest in a Scale - In all my years of learning to bake, trials, huge failures, and silly mistakes, I must say that investing in a kitchen scale makes the whole difference. Period. You don't need a fancy one either. I love my Zwilling one but you can find others that fit your style and budget.
- Do Not Over Bake - Even after the blondies are removed from the oven, the will continue to bake as they set and cool, so stick with the timeframe that is suggested in the recipe card below. The batter should be spongelike and bounce back if you gently press a finger into it.
- Whisk, then Fold - When you are done whisking together the wet ingredients, swap to using a spatula to fold in the flour. This helps to eliminate over mixing the dough.
- Let them Cool - It's important to let the blondies cool completely before cutting into them so that they have even lines when cut through. Blondies need time to set before they are cut and served.

- Butter - To get the chewiest texture in blondies, we use melted butter. I've tried making blondies a few times with more butter, less butter, room temperature, and melted, and the melted butter is absolutely a necessity.
- Sugar - A combination of light brown sugar and cane or granulated sugar helps to give the blondies sweetness, chewiness, and a little caramel flavor.
- Eggs - Room temperature eggs help make the batter insanely smooth. Also, we only use one whole egg and one egg yolk. The yolk helps to also give the blondies a decadent and dense chew.
- Vanilla Extract - Vanilla helps to bring out other flavors of the ingredients.
- Baking Soda - The baking soda helps to give a gentle rise and lift without being too dense and hard to chew.
- All Purpose Flour - The trusted type of flour I use in all of my baked goods. All purpose flour provides structure for the blondies.
- Sprinkles - Also known as jimmies, are the fun part of these funfetti blondies. Rainbow sprinkles always make me smile.

What do I do with any leftovers?
You can store any leftovers in an airtight container on the counter for up 5 days. If they become a little tough and hard, warm them in the microwave for 11 seconds (yes, that is very specific but trust me) and serve with whipped cream. SO good.
If you want to throw some in the freezer you can wrap them tightly in plastic wrap or add to a plastic food storage bag. Label the bag with the date you've made them and consume within 1-2 months. Defrost in the fridge overnight.
Can I make these into cookies?
If you are interested in making these in cookie form, simply follow the instructions for making the recipe, but let the cookie dough chill for an hour in the fridge, then bake at 350º for 11 minutes and let cool completely.
Could I use dark brown sugar instead of light brown sugar?
While I haven't tried these blondies with dark brown sugar, the results from using dark brown sugar will make the blondies very chewy, slightly underbaked, and a more golden color due to the molasses in the sugar itself.
How do I make this into a blondie skillet?
Easy! Add the blondie batter to a large greased cast iron skillet and bake for 30 minutes at 350º.
