In a large frying pan, add a tablespoon of butter to melt, then add the finely diced onions to sauté until fragrant and softened. Add the ground beef, and cook until halfway browned. Add in the garlic powder, paprika, salt, and pepper, then brown until fully cooked.
Once fully cooked, add in the dill relish, then toss to combine.
Finally, add in the cup of shredded monterey jack cheese, and fold in the cheese to allow it to melt into the ground beef.
Preheat the air fryer to 375º. Prepare the wonton wrappers by laying flat on a surface, then adding 1-2 scoops of the cheeseburger mixture into the center of the wrapper. Fold one end inward, then fold the sides of the wonton wrapper into the meat mixture. Roll to the remaining end of the wrapper, and seal with a little water. Repeat until all the cheeseburger mixture has been used.
Brush a whisked egg on top of each of the egg rolls before air frying. Place the egg rolls into the air fryer, seam side down. Air fry for 8-10 minutes or until golden and crispy on the exterior.
For the dipping sauce:
Mix together the mayonnaise, relish, ketchup, mustard, and lemon juice until fully combined.
Notes
Leave space in the air fryer: Do not place the egg rolls too close together as this prevents even airflow, which means they will not get as crispy. Feel free to cook the egg rolls in batches if needed.Seal the edges well: If the edges are not properly sealed with egg wash or simple water, they can open up while cooking and the filling will spill out.Roll with caution: Be careful when using the wonton wrappers as they are delicate and can fall apart if manipulated too much.Add enough cheese: The cheeseburger egg rolls should be cheesy on the inside, so if you need more cheese, add a pinch or two at a time (approximately 1-2 tablespoon more) until you reach the desired creaminess.
