Preheat the oven to 400º and line a baking sheet with parchment paper.
Cut off the top of the delicata, and remove the seeds inside with a spoon.
Then, cut the delicata squash into ½" thick rounds and place on the baking sheet. Repeat the same steps for the acorn squash, except when cutting the acorn, you can cut each half into smaller wedges.
Once the squash is placed on the baking sheet, drizzle with the olive oil and sprinkle with cinnamon.
Bake in the oven at 400º for 15-20 minutes. Let cool on the sheet for 5-10 minutes, then drizzle with the honey, and serve.
Notes
Be sure to scoop the squash to get rid of the seeds on the side before you roast.
