In a large bowl, mix together the eggs, sugar, vanilla, oil together until fully combined.
To the wet ingredients, mix in the cold coffee and bailey's irish cream.
Combine the dry ingredients into the wet and fold together with a spatula.
Add ¼ cup of batter to the waffle maker or waffle iron and close. Cook until desired crispiness and repeat until all the batter is used. Top with maple syrup, powdered sugar, and whipped cream.
Notes
Don't overfill the waffle iron with batter. The batter will drip and seep out of the sides if there is too much batter.
