Tuscan Chicken with Roasted Red Peppers and Spinach

When you think of creamy, cheesy, rich foods, what comes to mind?  I immediately think of a thick cream sauce or a buttery garlic sauce.  Tuscan chicken does a beautiful job of combining strong ingredients and melding them together to create this perfectly decadent sauce to go atop seared chicken.  Of course, throwing a vegetable in like spinach, basil, and sweet roasted peppers only enhances the dish.  This was my FIRST time making this, and I must say, I can’t wait to try this sauce over other proteins soon!IMG_0380.JPG

In preparing for this meal, I had to really think about what makes a creamy sauce, creamy.  Of course, I immediately jumped to heavy cream and cheese.  This is a very traditional way of making a “tuscan” creamy sauce by combining all the dairy components together, simmering on low, and layering it on top of pan seared chicken.  That is exactly what I did.  I started by taking chicken breasts and seasoning them with a generous amount of salt, pepper, and oregano.  I say generous because when chicken breasts cook, they tend to lose all the tenderness, so over-seasoning can capture the juices and make this particular cut of chicken tender and tasty! I heated a pan and then added in some avocado oil (has a higher smoke point and makes food taste badass) and began to pan sear the chicken.  Each side cooked for approximately 4-5 minutes, the chicken will finish cooking when added to the cream sauce.

For the cream sauce, I started with wilting some fresh spinach in 2 tablespoons of butter.  Once the spinach became soft and dark green, I  poured in the heavy cream and parmesan, stirring and letting the sauce bubble.  Once the liquid started to reduce, I added in sweet roasted red peppers and some sprigs of basil.  I mixed it altogether and sprinkled in n some salt and pepper.  Lastly, I added back the chicken and let the entire dish simmer for a few minutes (around 5-7m).

Served with some mashed potatoes, or homemade fries, maybe some brussel sprouts, and you’ve got yourself an awesome sauce (haha, get it?) meal!  Nomaste 🙂

Tuscan Chicken with Spinach and Roasted Peppers

Ingredients

  • 1 pkg chicken breasts can buy thin sliced already if desired
  • 1 pint heavy cream
  • 1/2 cup parmesan grated
  • 1 pkg fresh spinach
  • basil leaves
  • 2 halves sweet roasted red peppers from a jar, can slice them
  • 2 tbsp avocado oil or olive oil
  • 2 tbsp butter
  • salt
  • pepper
  • oregano

Instructions

  1. Clean and prep chicken breasts (either filet them or pat dry the already filed breasts).  Season with salt, pepper, oregano on both sides.

  2. Heat a large pan on medium, add avocado oil and let coat bottom of pan.  Add in chicken.  Sear on each side for 4-5 minutes until sides are browned. Taken chicken out and set aside.

  3. In the same pan, add the tbsp of butter and melt.  Add in fresh spinach and cook until leaves are wilted. Pour in heavy cream and parmesan cheese.  Mix together and let come to a gentle boil (soft bubbles form).  Simmer on low.

  4. Add in basil and roasted red peppers.  Stir together.  Place chicken into cream sauce and ladle sauce on top of the chicken.  Let simmer for 5-7 minutes.

  5. Serve with favorite side of potatoes, with rice, or simply roasted veggies.

Bean(less) Beef Chili

Let’s face it.  There are a bagillion and five ways to make chili.  Do I add beans? If so, what kind? Should I make it in the crockpot? Instapot? Dutch oven?  How long does it cook for?  Do I add rice? Veggies? GAH!  Chili has become such a versatile and fun dish to make because the truth is, it’s whatever you want it to be.  To be fair, and to give credit, chili in its traditional sense is cooked low and slow on a burner for a few hours, and has a variety of beans and made with beef, but this can absolutely be made with turkey if that’s your prerogative.  Tonight, it’s made in a dutch oven and blended with fresh veggies!IMG_0329

The chili I make is most of the time bean-less as I don’t prefer beans (and being that I’m 90% of the time eating Paleo-style, beans are not part of the Paleo protocol) and they’re just added texture that I just don’t like.  Now, that’s not to say this chili isn’t flavorful… because it definitely packs a punch!  With layered seasonings like cumin, chili powder, pepper flakes, onion and garlic powder, and of course S&P, it creates a harmony unlike no other.  I start with a large onion and roughly chop it so that the pieces are not all the same, but relatively small and thin. I heat my dutch oven before adding the oil, then add in the onions and some salt.  The onions will begin to become translucent and fragrant, then I add the in sliced cherry tomatoes (really just for fun and texture) and let it settle.IMG_0317

I take 2 lbs of grass fed ground beef and add it to the pot, seasoning with just the salt, onion and garlic powder, and mix together well.  As the ground beef begins to brown, I break apart the large meat chunks with a wooden spoon.  Mix all together and add in the tomato sauce (for tonight, I just used what I had in house, which was a jar of Classico sauce, but I prefer traditional tomato sauce in a can).  Stir together to coat all ingredients and then add in the chili powder, cumin, pepper, and red pepper flakes. Stir and let sit on a low flame for two hours.  After one hour, I add in chopped zucchini.

Alas, the results is a chunky, hearty, and bean(less) chili that packs a kick and warms the soul simultaneously.  Top it off with sour cream, cheese crisps, or grated cheddar for extra pizzazz.  Enjoy and, Nomaste 🙂

Bean(less) Chili

Ingredients

  • 2 lbs grass-fed ground beef
  • 1 jar low-sugar tomato sauce
  • 1 large onion chopped
  • 1 cup cherry tomatoes sliced
  • 1 medium zucchini sliced then chopped
  • 1 tbsp olive oil
  • 1 tbsp cumin
  • 1 tbsp red pepper flakes
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Salt
  • Pepper

Instructions

  1. In a large pan or dutch oven, turn heat to medium and then add the olive oil.  Add in chopped onions and begin to let simmer. Add tomatoes and stir.  Let simmer and occasionally stir, waiting for the skins to begin to peel and the onions to be translucent

  2. Add in ground beef and break apart with wooden spoon.  Stir together with onions and tomatoes, adding garlic and onion powder and salt. Let sit and brown, about 7-8 minutes.

  3. Pour in tomato sauce and stir to coat evenly.   Sprinkle in chili powder, red pepper flakes, pepper, and cumin.  Cover and turn flame to low.  Simmer for 2 hours

  4. After one hour of cooking, add in the chopped zucchini.  Stir and cover.  Cook for remaining time; stir occasionally.

  5. Serve over rice or sweet potato, regular potato, etc. Add cheese or favorite condiments as needed and enjoy!

Creamy Chicken and Wild Rice Soup

I’m a fall girl, 100%.  I could deal with being in warmer weather, if I lived super close to a beach, or in Florida.  Living in New York, and experiencing all four seasons, Fall is absolutely my favorite.  The leaves change, the holidays approach, the smell of pumpkin and apple pie, and SOUP.  I could eat soup everyday, and I love all varieties.  This one in particular reminds me of Panera’s chicken and wild rice, and its hearty, filling, and good for the soul!IMG_4174

I broke out the crockpot for this guy, as I usually do for soups because I love a slow cooked meal, especially in the Fall/Winter seasons.  Crockpot meals are the best because you literally throw everything in at once, checking in every so often, and stir.  With this recipe I used Trader Joe’s Basmati and Wild Rice blend that comes with dehydrated veggies and seasoning, bay leaves, organic chicken breast, fresh carrots, and celery.  For the broth I used 2 cartons of bone broth.  Bone broth is an old tradition of boiling poultry or beef bones, getting all the gelatin and collagen from the bones, for hours (like, upwards of 10-15 hours).  Bone broth has so many benefits and nutrients our bodies need, which is why I’m so glad that it’s readily available in Whole Foods or Trader Joe’s.

I played around with the different lengths of time and temperature, but the end result:  cook on low for 6 hours and add in water or broth as needed.  This recipe in particular requires a good amount of liquid, and a 1/2 cup heavy cream or 1/2 and 1/2 at the end, hence the “creamy” part of the recipe.  I didn’t season with any salt or pepper until it was almost ready to be served, as I wanted to be sure the seasoning wasn’t overpowering.  To create the shredded chicken, I took the chicken breasts out about 30 minutes before the soup was done, shredded with two forks, and added it back in.  Serve with a slice of baguette and you’re ready to feast!

Creamy Chicken and Wild Rice Soup

Ingredients

  • 2 lbs Organic chicken breast
  • 1 pkg Wild rice
  • 2 cartons Chicken bone broth
  • 3 stalks Carrots sliced
  • 3 ribs Celery chopped
  • 1/2 cup Half and half
  • 3 Bay leaves

Instructions

  1. Chop/slice the carrots and celery. Set side

  2. Layer the chicken, celery, carrots, and package of rice into a medium size crockpot.

  3. Pour in the cartons of bone broth into the crockpot.  Cover and set to low for 6 hours

  4. Add in more water as need and desired if the liquid becomes absorbed as the soup cooks.  Stir occasionally.

  5. 30 minutes before the soup is done, take out chicken and shred with two forks. Add the chicken back into the soup.

  6. Pour in the 1/2 cup of half and half and season with salt and pepper.  Taste and add more as desired.

  7. Serve with a slice of french baguette and enjoy!
