When you think about roasting squash in the oven, you would typically think of butternut squash or even zucchini. This recipe does not include either of those vegetables, instead, we use for delicata and acorn! This super simple and healthy oven roasted squash recipe is going to easily become one of your favorite fall recipes. Simple, healthy, and a perfect side for just about everything!
Squash is entirely versatile and great as a side dish all year round. While delicata and acorn are typically at peak during the Fall season, we'll go over what other squash you can swap further down in this post.

What ingredients do I need for this squash recipe?
This recipe calls on the basics for the ingredients aside from the delicata and acorn squash. Here's the rundown of what you need:
- Delicata Squash - this yellowy, green-striped, oblong-shaped squash, also known as peanut squash, is known for its creamy texture and delicate rind.
- Acorn Squash - this squash is shaped like the name suggest, like an acorn. It's typically a dark green with an orange spot on it. Not as sweet as butternut, but when roasted, it's perfect and tender.
- Olive Oil - a drizzle on top of the cut squash helps the flavor as it roasts
- Cinnamon - sprinkling the cinnamon on the squash before it roasts help to bring out the aromas and flavor of both squash.
- Honey - we save the honey for the end after it bakes to give a generous drizzle.

What are the directions for roasting this squash?
Simply put, you'll follow very basic steps for making this recipe, and you'll come to find how easy it actually is.
Preheat the oven to 400º and line a baking sheet with parchment paper. Cut off the top of the delicata, and remove the seeds inside with a spoon. Then, cut the delicata squash into ½" thick rounds and place on the baking sheet.
Step 2: Repeat the same steps for the acorn squash, except when cutting the acorn, you can cut each half into smaller wedges.
Step 3: Once the squash is placed on the baking sheet, drizzle with the olive oil and sprinkle with cinnamon.
Step 4: Bake in the oven at 400º for 15-20 minutes. Let cool on the sheet for 5-10 minutes, then drizzle with the honey, and serve.
HINT: You could also roast the squash seeds and top the squash with them if you want, they are edible!
Recipe Swaps and Substitutions
This recipe is pretty standard, with minimal ingredients, therefore doesn't always lend itself to may swaps or subs. If you did want to swap or sub a few things, here is what I would suggest:
- Squash: Swap out either of the squash with butternut or even honeynut.
- Cinnamon: If you prefer a savory seasoning, simple salt and pepper work great here too.
- Honey: Not into honey? Leave it out!
Recipe Variations and Toppings
A few other ways to make this recipe include toppings and "stuffings" such as:
- Sautéed apples - add the apples in the hollowed-out squash or right on top.
- Ground pork or beef - pour this directly on top or inside the squash.
- Bacon - add some chopped pieces of bacon on top for added crunch.
- Roasted seeds such as pepitas, sunflower seeds, or the seeds from the squash itself!
What to Serve with Oven Roasted Delicata and Acorn Squash
You can pair this recipe in a few different ways!
- Chicken: Make these roasted chicken thighs which pair really well with the squash, Both can roast at the same time, but the chicken will roast for much longer.
- Short Ribs: these slow cooker braised short ribs, or even short ribs in the dutch oven, are excellent for this squash.
- Turkey: Italian Turkey meatballs are great when paired with a simple, healthy side such as this squash.
- Chili: My favorite way to eat squash or any roasted veggie like a potato is with this slow cooker beef and bean chili. Hearty, comforting, and irresistible.
- Seafood: Seafood like this honey glazed salmon will be delicious on top of the roasted squash
How do I store and save the leftover squash?
All leftovers can be placed in a tightly sealed tupperware and placed directly in the fridge. The squash will be good for up to 4-5 days.

- 1 medium acorn squash scooped, halved, then sliced
- 2 tablespoon olive oil
- 1 tablespoon cinnamon
- 1 teaspoon honey
Instructions
- Preheat the oven to 400º and line a baking sheet with parchment paper.
