Homemade Chocolate Covered Pretzels

I am a die hard lover of pretzels. Large, small, in pieces, nugget form, sourdough, whole grain, NYC-style $2.00 pretzels off the cart. ALL OF THEM are my favorite. Additionally, I am a huge fan of chocolate. I had a disdain for dark chocolate, but after finding Hu Kitchen, my world has been turned upside down. I was purchasing chocolate covered pretzels at the store and realized just how much sugar and additives go into them to make them shiny and stable, and while they’re delicious nonetheless, they are not as healthy as I would like. Hence, these homemade chocolate covered pretzels with literally TWO ingredients and can be done in a pinch.

No matter the meal, there’s something about the sweet and salty combination that gets me everytime. I love the balance that the sweetness of the chocolate gives, while the sharp saltiness brushes against the taste buds simultaneously; it’s a melodious match! Homemade chocolate covered pretzels are seriously the best, but the trick is finding high quality chocolate. Anywho, back to the chocolate. Here’s what you’ll need:

  • 1 cup mini pretzels
  • 3/4 cup melting chocolate
  • parchment paper

Add the chocolate to a microwave safe bowl and throw in the microwave (2m30s at half power or use the “soften” button if available) or use a double boiler: a small pot with water and the larger bowl with chocolate over it, stir as the chocolate melts on a low flame. Do not cover!

Once the chocolate is melty, add the pretzels one or two at a time. Flip so both sides are covered and lay on parchment paper. Repeat until all pretzels are covered (you might want to do 1 1/2 cups of pretzels or throw in some fruit like I did with pineapple) and lay flat in the fridge overnight. BOOM. Perfect late night snack!
