Almond Butter Chocolate Cookies

I am officially obsessed with baking easy cookie recipes with nut butters. I have several varieties of cookies written in my phone using either almond butter or peanut butter. The interesting part about baking with almond butter is the end result of these cookies were vastly different than the peanut butter cookies. These had a sharper nutty flavor and a slightly different texture. You’re going to love these almond butter chocolate cookies, especially because they bake for 13 minutes and only take four ingredients.

Baking cookies always makes the house smell absolutely delicious. It brings back memories of baking with my grandmother in her house in Brooklyn. She always made at least seven different varieties of cookies during the holidays. My grandmother made little cookie packages for family, friends, even neighbors as gift packages. It was the sweetest thing; her cookies were to die for. I can only hope that this tradition lives on with my son as he grows older.

The best part about these cookies is that it takes only four ingredients:

  • Almond butter
  • Cane sugar
  • 1 egg

What I love about these almond butter chocolate cookies is that they are great for breakfast, a snack, or dessert (maybe with some whipped cream). These are fun and so easy to make, you’ll have these on replay all month long!

Almond Butter Chocolate Cookies

  • 1 cup almond butter
  • 1/2 cup organic cane sugar
  • 1 egg room temperature
  • 1/4 cup dark chocolate chunks (or 1/2 a dark chocolate bar) roughly chopped


  1. Preheat the oven to 350º and line a baking sheet with parchment paper.

  2. On a cutting board, roughly chop the dark chocolate into smaller, bite size pieces.

  3. In a medium bowl, whisk the egg, sugar, and almond butter together until all ingredients are incorporated.

  4. To the batter, add in the chocolate and fold in with a spatula.

  5. Scoop a golf ball size amount of batter into your hand (or a quarter ball size if you prefer smaller cookies – this will yield 12 smaller cookies) and press the dough into a "pancake" shape.

  6. Lay flat on the parchment and repeat until all the dough is used. Bake for 13 minutes.

Recipe Notes

  • The cookies will appear and feel underbaked but it is OKAY!  Let the cookies cool COMPLETELY (or approximately 20-30 minutes) prior to eating and serving.
