Easy Peanut Butter Cookies

Sometimes, the best recipes are straight up easy without any swaps or complications. Making cookies easy and accessible is something I am very passionate about, especially now having an almost 10 month old at home. When I develop recipes, I think about the ingredients I use and how they work together. Oftentimes, I’ll ask myself, “Does this particular ingredient mesh well with this one?” and give it a shot. If it doesn’t work, I alter it or abandon the recipe entirely. Thankfully, this peanut butter cookie recipe is the perfect blend of peanut butter, a touch of sweetness, baked until JUUUUST crisp on the outside; of course, the soft and buttery center. Oh, and these peanut butter cookies only take three ingredients.

I’m a firm believer in buying most of my groceries organic, especially my produce. I am also someone who tries to buy products without “natural flavors” and long ingredient lists. When I make recipes, I like to think about the accessibility of the ingredient list too, and this recipe calls for THREE ingredients you probably already have in your pantry or fridge:

  • 1 egg
  • 1/2 cup organic cane sugar (or just regular cane sugar)
  • 1 cup organic peanut butter

Once upon a time, I didn’t eat peanut butter, and resorted to almond butter. Now that I eat both, I can guarantee more of these easy-baked cookies in the near future.

Ingredients

  • 1 cup organic peanut butter creamy peanut butter
  • 1/2 cup organic cane sugar
  • 1 egg

Instructions

  1. Preheat the oven to 350º and line a baking sheet with parchment paper.

  2. Whisk together the peanut butter, cane sugar, and egg until the batter is fully combined and becomes thick and tacky.

  3. Using an ice cream scoop, scoop the batter and place onto the baking sheet, leaving room between each cookie. Repeat until all the batter is scooped and placed onto the sheet.

  4. Bake for 13-14 minutes, do not overbake here! Let cool completely (approximately 20 minutes) before serving or eating.
