BBQ Chicken Meatballs

Never have I ever thought I would love ground chicken as much as I do. Up until a few years ago, I only really ate ground turkey. For a number of years, I despised ground beef; I actually didn’t even eat red meat altogether. When my husband and I went to Italy on our honeymoon, I tried a bite (or six) of a Bistecca Fiorentina at a restaurant in Florence, which sparked my consumption of red meat again. I am very particular when it comes to ground meat. I always choose organic, grass-fed as much as I possibly can. After several years of eating ground beef again, there are times where I just don’t want something so heavy, and ground turkey can taste extremely dry and gamey. Ground chicken, when seasoned really well, can be a perfect meal and excellent for meatballs.

This goes without saying, barbeque sauce comes in so many varieties. I love a good BBQ sauce, but if you ever read the back of one of those jars, the ingredients can be quite shocking, and unfortunately, very unhealthy. High fructose corn syrup, added sugar, weird additives, the list goes on. A few years ago I found The New Primal and fell in love with their marinades. They have a variety of flavors, and of course, their classic sauce. It’s a little sweet, but super flavorful, and made with clean ingredients. You can find them here. I used a few tablespoons in the meatballs themselves, and then poured the rest of the bottle over the meatballs and warmed them, perfect for dinner (and paired well with simply roasted broccoli and brussel sprouts). Of course, a few dashes of Worcestershire, some breadcrumbs, parmesan cheese, and traditional flavors like garlic and basil, these meatballs were so good I cannot wait to make them again.

Here’s what you’ll need:

  • 1 lb ground chicken
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 1 tbsp Worcestershire sauce
  • 3 tbsp BBQ sauce
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried basil
  • 1 tbsp chili powder
  • 1 tbsp paprika

Preheat the oven to 375* and line a baking sheet with aluminum foil. Spray some nonstick cooking spray onto the aluminum foil. Take the ground chicken and add to a mixing bowl. Add the egg, bread crumbs, parmesan cheese, Worcestershire sauce, bbq sauce, and all of the seasonings to the bowl. Using a silicone spatula (or your hands), begin to knead the mixture together until all of the ingredients are combined and creates a large ball. The meatball mixture should feel slightly tacky but not tough.

Take two tablespoons of the meat and roll into balls with your hands. Place on the baking sheet and repeat until all the meatballs are formed. Bake for 30 minutes or until slightly golden brown on top. Add your barbeque sauce on top and serve with your favorite sides!
