Breakfast Sausage Gravy

A few months ago, I placed my first order on Thrive Market for a meat/seafood box (which you can get here!) and received some ground breakfast sausage. I honestly forgot about it, until recently when I went through the bottom of my freezer and came across it with great excitement. I love a good biscuits and gravy, and so when I found this package of breakfast sausage, I knew I had to make some sausage gravy, sans biscuits (I’m not there yet with my baking, but hopefully someday!)

The base of this recipe is essentially ground sausage in a thick, creamy sauce made with a roux. A “roux” is a mixture of melted butter and flour, forming a paste as a precursor for any liquid being added, which in this case is a pint of heavy cream. The flavor of the breakfast sausage paired beautifully with the cream as it didn’t need any other flavorings (maybe a little more salt and pepper) due to the blend of seasonings and flavor in the sausage itself. I didn’t have biscuits and I had planned to make pancakes to go along with this gravy, but time escaped me, so I resorted to some thick-sliced sourdough bread. Honestly, the sourdough stood up very well to the gravy and gave a perfect balance to the heaviness of the gravy, and meatiness of the sausage itself. Plus, the bread was a perfect dipping agent for the leftover sauce on my plate!

Here’s what you’ll need to make this delicious comfort breakfast:

  • 1 lb ground breakfast sausage
  • 1 pint heavy cream
  • 2 tbsp butter
  • 3 tbsp flour
  • Salt
  • Pepper

Heat a large frying pan on medium heat, add ground sausage and cook until mostly brown. Pour into a bowl and set aside. Add the butter and flour to the same pan and whisk to create a paste/roux. Pour the heavy cream to the pan and whisk, bringing the mixture to a boil and then simmer until thick (the sauce can coat the back of a spoon).

Add the sausage back to the pan and mix together. Season with salt and pepper. Dealer’s choice: add biscuits, eggs, pancakes, or thick sliced bread, like my sourdough. You’ve never made an easier, hearty, comfort food than this!

Ingredients

  • 1 lb ground breakfast sausage

Instructions

  1. Heat a large frying pan on medium, add the ground sausage and cook until almost fully browned. Pour into a bowl and set aside

  2. Add the butter and flour to the same pan, and whisk until it forms a roux/paste, pour int the heavy cream and whisk. Bring heat to a boil, then simmer until the sauce gets thick (can coat the back of a spoon)

  3. Once the sauce is thick, add the sausage back to the pan and mix to coat. Season with salt and pepper. Mix again; serve with eggs, biscuits, pancakes, waffles, or sourdough bread.
